After seven formative years at Le Bristol Paris, working alongside the late Laurent Jeannin, Nicolas refined his understanding of precision and luxury. In 2020, with over twenty years of experience, he opened Nicolas Rouzaud at The Connaught, now recognised as one of London’s most exceptional pâtisseries. Known for his fruit-led tartelettes, his approach is deliberately simple: seasonal fruit at its best, delicate pastry and flawless technique, creating pastries that are elegant, balanced and deeply pleasurable.
